What to do if Pegasus Spyware is suspected on an Android?

Hello, I hope this doesn't violate rule 11. Apologies if it does. I am a frequent hitchhiker and I've been through 86 countries so far including Lebanon, Syria, Jordan. Afghanistan and Israel. I have a popular YouTube channel but I keep things pretty non political. After being in Israel for 3 weeks I was detained when leaving at the border between Jordan and Israel by the Israel side. They were generally polite but something very odd happened when I was taken back to be questioned. My phone never left my sight, although he did have me open and show him messages and Facebook posts. After he was done looking, he began reading on his screen a WhatsApp exchange I had with a man I had met in Bethlehem (the man was Muslim with a very Muslim name). It was not a message he had seen while scrolling through my phone as I was sitting there the entire time and saw what he saw and he didn't connect my phone to anything. He read maybe 7 messages to me from his laptop and asked me questions about them (they were just flirty, nothing political). When he finished, he began writing down my information like name and places I am heading to next etc, and then the last question asked if I had connected to the wifi, when I replied yes he wrote this down and then let me go. I had connected to the wifi both times I passed through. I am now a bit paranoid as you can imagine, I have no idea how my WhatsApp messages could have got on his screen as I KNOW he didn't connect to anything as he literally was having me scroll and open things and it only lasted a few minutes, truly my phone was never more than 20cm from me and on the one occasion that he took a closer look, even then, I saw what he was looking at and he was never in my settings etc. This happened a month ago and I have still been using my phone without noticing anything but I finally came across this sub and thought I would ask if there is anything I can do. Honestly, I more worried about my contacts being targeted (Idk how it all works). I just feel generally uneasy about all this and my best guess is that he got into my WhatsApp via the wifi? I don't know why he wouldn't just read the WhatsApp messages to me while he had my phone. It's like he wanted me to know that he had my information on his screen. And Idk why he would ask me "did you connect to the wifi" and jot down my answer after he already had my WhatsApp messages on his laptop. I'm just all over uneasy. I did see the post on here about another person who thinks they were hacked but they had an iPhone and I have a Samsung so I assume advice might be different? I have been home for a week and used the wifi and Bluetooth and now wonder if all my devices have been infected. I have read the information on Citizens Lab and Amnesty and I have emailed Citizens Lab but have not got a response. The reason I'm thinking so much about it now is because it finally popped into my head that this man I was chatting with from Bethlehem might have been someone important to them for surveillance and hence making me a target via him. It didn't really enter my head that they would spy on me for me because although I go all over the place, my social media is all nonpolitical and mostly food and nature. If anyone has any advice, I'd appreciate it, my phone is connected to my laptop and obviously my wifi and I just don't know what measures to take to feel more comfortable. Thanks in advance.

For example, reddit.com/.../FjHLr2Bkmf Looks like some shady Israeli company, doing shady things with big corporations. I figured out some basics of adb, and removed a bunch of AI packages from my Android. It's been a week, and my phone still works as usual; except I am not getting those annoying "Use AI Writer app" notifications. Anyone has a list of shady packages that can be removed with adb, and use the phone as a non-spying phone?
